COLTIVIAMO LA DIVERSITA' The project has its final result in seeking over the territori of the Park the local varieties still used among the farmers and characteristic of the territori, discovering once again the genetic and cultural heritage bounded to the agricultural local varieties. The farms agreeing to the project (purveyors of our restaurant) are engaged to agree to the test system by Boards of control and biological certification legally authorized Law D.Lgs. n°220-1995. IN EVERYDAY MENU YOU CAN FIND Chickpeas soup and mushrooms Ingredients: sulmonese chickpeas, sulmonese red garlic, fresh rosemary, peperons and mushrooms. Ravioli made of saffron and walnuts Ingredients: ravioli of made of ricotta froma Majella grassland with sulmonese saffron sauce and campogiovese walnuts. Spelt soup, barley and beans Ingredients: caramanican spelt, red potatoes of Montenero and sulmonese barley and beans. Fillet of beef and huckleberries Ingredients: Beef and huckleberries. Ceciripieni (chickpeas filled cakes) Ingredients: Cake bunkles filled with sulmonese chickpeas, campogiovese walnuts, pacentrani boiled must and cocoa. Chocolate almonds Ingredients: Sulmonese toasted almonds and chocolate. |
